Egusi soup instructions
- You wash up the beef and the fish separately first and put the beef in a pot...Add water and a little maggi,onion and salt...When the beef gets a bit tender, you add up the stockfish to it. When it boils, you put it down and set aside.
- Get your ingredients ready..Grind your egwusi and set aside...Do same to the crayfish and set aside in another plate...Also grind the pepper separately..slice the onion and tomatoes and set aside too.
- You set your pot on the gas till it dries up....then you add a little bit of oil to it(enough to cover your egwusi). After that, you pour in your onion and stir for a while after which you put in the egwusi and start frying....this should be done at low heat to prevent it from burning..
- Add the stock from the beef and fish little by little while you keep stirring then you add up the tomato and pepper and continue stirring. Put in the beef and fish at this point too!.
- You leave to boil for a while but continually stir in between...Then you add up the ground crayfish, maggi and salt to taste and you cover the pot for a while..
- Slice up the pumpkin leaves at this point and add to the soup mixture....stir for a while and put down.
- Best served with fufu(akpu) or semolina and chilled water.
