Ingredients of Shitor(Ghanian black sauce)
- Prepare 1/2 cup of Cayenne pepper.
- You need 2 of large onions.
- Prepare 1 TSP of crayfish.
- It's 1 tsp of dried fish.
- Prepare 1/2 cup of veg oil.
- Prepare 2 of maggi star cube.
- Prepare of Spices of choice.
- You need of Tomatoes (optional).
- Prepare of Ginger paste(optional).
Shito (also called shitor) is a famous Ghanaian hot chile condiment, akin to a relish, with a deep, earthy, smoky, fishy flavor. Shito is a black pepper sauce usually eaten with kenkey, banku, fried yam or as an additional sauce to your rice. It adds a great flavour to your dinner and it is not hard to make. Shitor(Ghanian black sauce) instructions
- Pound/grind ur cayenne peppe(barkonu) to a smooth powdered form,slice one and a half onions and add to d grinded pepper n pound till d onions is well mixed wv d grinded pepper. Add ur sour less tomatoes (optional) n grind till smoothness is achieved.
- Heat oil in a pan,add half of the sliced onion n stir,allow it saute not burnt. Add up ur puree,crayfish,dried grinded fish n keep stirring it. Add ur seasonings,spices of choice,ginger paste n keep stirring over medium heat till u have brownish or reddish a brownish den its well fried..
- Allow to cool n Serve with anythn of ur choice.. This can stay for more dan a month if its well fried without reheatn. No water is added when preparing.
- Its sweet,aromatic n super delicious.
