Asparagus and Bacon quiche. Sprinkle Swiss cheese over bacon and asparagus. Pour egg mixture on top of cheese. Instead of steaming the asparagus, like others, I sauteed them in a little bit of the leftover bacon drippings (saves you dirtying another pan).

Gruyere was the perfect match for the bacon and asparagus combo. I love this salty cheese, that is the perfect kind of cheese for melting in a pasta. This asparagus and bacon quiche is fabulous on its own, or with a light side dish. Hearty and creamy, the asparagus gives it a nice texture while the maple bacon gives it just a touch of sweetness. If you don't like maple bacon, that's fine, just use smoked instead, I just happened to have some maple.
